Cascara Spritz Cocktail

The Aperol Spritz is an exceptionally popular cocktail from Italy, now making it’s waves across North America.  LeClair Organics used our Cascara tea to make many unique variations of our own cascara spritz cocktails.  When using Aperol or the Campari counterpart, these cascara tea cocktails have a very bright reddish-orange coloration that will make for a distinctively vibrant cocktail.  Per all the variations mentioned below they will be utilizing a Gin Copa or Balloon Glass filled with ice for such a larger volume type of drink.

3 oz parts Prosecco

2 oz parts Aperol

2 oz parts Cascara Tea

1 Orange Slice

Cascara Campari Spritz Cocktail Recipe

3 oz Prosecco

2 oz Campari

2 oz Cascara Tea

1 Orange Slice

Cascara Gin Spritz

If you are looking for an visually unique and vibrantly coloured baloon glass drink, then this is your drink.

1 1/2 Purple Pea Gin such as British Columbia Empress Gin

3/0z Pre-Chilled Cascara Tea

2oz Prosecco

1 Grapefruit Slice

Option 1: 1/2 oz Honey Syrup, 1/2 oz Symple Syrup

Option 2: Reduce to 1oz gin, add 1oz campari

Option 3: Reduce to 1oz clear gin & 1oz campari for a vibrant red drink

Instructions:

Make our cascara tea as per our recommended guidelines of 20 grams per 200 ml of water and let steep for 5-8 minutes.  We like to use a French press, however steep as you would any other regular loose teas.  Place the cascara tea in the fridge until it is cool enough to serve.  Place all items in a mixing glass with ice and stir.

Fill a balloon glass with ice.  Double strain and pour into your balloon glass.  Place a thin slice of orange or two underneath your ice so it is positioned tight up to your glass and visible to see.

Variations

The classic aperol spritz recipe utilizes a prosecco sparkling wine as they are both Italian.  This particular sparkling wine is classified as prosecco only if grapes are grown from a particular designated region in Italy.  There are many exceptional Canadian made sparkling wines in which you may use instead of the Italian prosecco variation.

The recipe may substitute the aperol or campari for a type of citrus liqueur such as cointreau or grand marnier.  Another option may instead be a blue curacao orange liqueur for an exceptionally unique blue coloured variation.  Perhaps simply switch the recipe per what is currently on hand.  They will all work great!

There are endless variations with minor tweaks but I will list a few more below!

As a Canadian based company we always enjoy supporting other home grown companies and incorporating them frequently into our cocktail recipes.  Pending the region you are in and availability, perhaps particular gin’s to choose from may include a Saskatoon Gin from Lucky Bastard Distillery, a Toronto Gin from Spirit of York Distillery, or a Vancouver Granville Island Gin from Liberty Distillery.

Campari Cascara Iced Tea Cocktail

Remove the prosecco and increase the amount of tea in the recipe.  This recipe won’t have the bubbles, but still the very vibrant colouring.

4oz Cascara tea

3 oz Campari

optional: substitute 1 1/2 oz campari for gin

Campari & Cascara Tonic

Substitute the prosecco bubbles with a tonic water or flavoured tonic water.

3 oz flavoured tonic water

2 oz Campari

2 oz Cascara Tea

1 Orange Slice

Aperol & Cascara Tonic

Substitute the prosecco bubbles with a tonic water or flavoured tonic water.

3 oz elderflower flavoured tonic water

2 oz Aperol

2 oz Cascara Tea

Campari Cascara Soda

Substitute the prosecco with a soda water

3 oz soda water

2 oz Campari
